Ingredients:
20ml strong espresso
175g unsalted butter
100g caster sugar
200g dark chocolate
4 eggs (separated)
200g almonds
Preparation: Preheat oven to 175°C. Grease a 20cm cake pan and line with parchment paper. Melt chocolate and butter together, mixing in espresso until smooth. In a separate bowl, beat sugar and egg yolks until fluffy. Finely grind almonds without over-processing. Combine espresso mixture with egg and sugar mixture, then fold in ground almonds. Beat egg whites until stiff peaks form and gently incorporate into batter. Pour into prepared pan and bake for 25-30 minutes, adjusting for preferred moistness.
