6½ oz plain flour
3½ oz cold butter
1 tbsp icing sugar
1 egg yolk

2 tbsp cornflour
3½ oz golden caster sugar
2 lemons (zest and juice)
1 small orange (juice)
4 oz butter
3 egg yolks + 1 whole egg
For the meringue
4 egg whites
7 oz golden caster sugar
2 tsp cornflour

Method
Mix flour, butter, icing sugar, egg yolk, and cold water to form a dough. Wrap and chill overnight. Preheat oven to 350°F. Line a tart tin with the pastry, chill briefly, then blind bake with beans for 15 minutes. Remove beans and bake further until golden, about 8 minutes. Combine cornflour, sugar, and zest in a pan. Add strained lemon and orange juice, cook over medium heat until thickened. Remove from heat, stir in butter, then gradually mix in the beaten eggs. Bring back to heat until smooth. Pour the filling into the baked crust. Beat egg whites, gradually adding sugar until stiff peaks form. Cover the filling with meringue, sealing at the edges.
